The Ultimate Raw Vegan Pasta Sauce

Are you ready to elevate your pasta experience to a whole new level? Say hello to this vibrant raw vegan pasta sauce that, quite frankly, tastes like pure energy! This blend of simple, wholesome ingredients will add some pizzaz to your meal, all the while keeping the freshness from plant-based ingredients. Imagine a sauce bursting with the flavors of the sun, right in your bowl!


Types of Pasta

Elevate and make a deposit on your energy levels by pairing this raw vegan sauce with vibrant raw zoodles made with a spiralizer and fresh summer squash or zucchini! Or if you prefer traditional pasta, there are several healthier alternatives to conventional pastas made with ultra processed flours, such as grain-free. No grain means made from ingredients like almond flour, vegetables, or legumes. Vegetable-based noodles are made with zucchini, spinach, or carrots, and offer a fresh and nutrient-rich alternative to pure flour. Legume-based pastas are made from chickpeas or lentils and are popular these days for their high protein and fiber.


Whichever pasta style you choose, this highly nutritious sauce is sure to satisfy because it only includes simple ingredients like ripened tomatoes, zesty herbs, and a medley of colorful vegetables, all blended to perfection. Every forkful will deliver an explosion of taste that is packed with vitamins, minerals, and antioxidants. Whatever you do, skip the dead and lifeless acidic jars of "ragoo" and add more life to your bowl!


Ingredients:

  • 2 very red whole Roma tomatoes

  • 2 chopped & pitted soaked Medjool dates

  • 1/3 cup minced carrots

  • 1/3 cup chopped fresh cilantro

  • 1/3 cup chopped red onion

  • 1/3 cup finely chopped red beet

  • 1/4 cup nutritional yeast

  • 1/4 cup grounded golden flaxseed

  • 2 tablespoons soaked raw cashews

  • 1 tablespoon raw honey (or maple syrup if you don't use honey)

  • 1 teaspoon pink salt


Instructions:

  1. Start by soaking the dates and cashews in about 2/3 cup water for about 30 minutes.

  2. Add the tomatoes in your blender, then all of the fresh vegetables, then the dry ingredients. Lastly, pour in the dates, cashews, and water.

  3. Start blending on low, gradually increasing speed to avoid splattering the ingredients onto the sides of the blender. Turbo blast for about 7 seconds once everything is incorportated.


Makes about 2 cups of vibrant and delicious sauce! Enjoy.
