Quick and Easy Vegan "Alfredo" Sauce

Sweet potatoes, a vibrant and versatile root vegetable, are celebrated not only for their deliciously sweet flavor and creamy texture but also for their impressive nutritional profile. Rich in vitamins, minerals, and antioxidants, sweet potatoes are an excellent source of beta-carotene, which the body converts into vitamin A. Vitamin A promotes healthy vision and immune function. Additionally, they provide dietary fiber, which aids in digestion and helps maintain a healthy weight. Incorporating sweet potatoes into your diet, and those of your children, is an easy and sneaky way to get your family to eat their root veggies.


I made this sauce in a hurry so as you can see, I only used foods already packaged and frozen. I didn't have time to chop any onions or mushrooms, ingredients I usually use to create sauces for my son to eat with his pasta. He is a pasta addict so I try and make sure we pile on the veggies, even if the veggies are disguised in a sauce. Our blender is literally right underneath the spice cabinet so whatever I saw, in it went.

Frozen veggies are my life line as an employed mom. I either make them or buy them. If you make them, just make sure to date them. That way you know how long they've been in the freezer. But if your like me always scrimping for time, your freezer foods won't last long enough to worry about that lol.

The best part about this alfredo sauce is how low fat it is. Traditional alfredo sauce is made using butter and cheese so not only do you end up exceeding your daily if not weekly intake of fat, you also experience that guilt in the end. That guilt ladies and gentlemen is real. It comes from a place of truth and knowing you "sinned" against the laws of health. The flesh lies, the soul doesn't.


Ingredients:

  • 1 -10 ounce package frozen cut Sweet Potatoes

  • 1/2 cup yellow corn, unsalted (canned or frozen)

  • 1/2 cup unsweetened coconut milk (used SO Delicious brand)

  • 2 tablespoons nutritional yeast

  • 2 tablespoons fresh homemade salsa (optional)

  • 1 tablespoon minced garlic

  • 1 teaspoon onion powder

  • 1/2 teaspoon pink salt

  • Extra Virgin Olive Oil spray


Instructions:

  1. Lightly spray a medium frying pan with the olive oil on medium heat.

  2. Add the frozen sweet potatoes, yellow corn, minced garlic. Saute for about 5-7 minutes if your ingredients are not frozen. 7-10 minutes if they are.

  3. Remove from heat and cool 3 minutes before adding all of these ingredients into your blender.

  4. Add remaining ingredients, coconut milk, onion powder, yeast, and salt.

  5. Blend starting on low speed, gradually building upt to a turbo blast for up to 10 seconds. Use your tamper to keep things down if necessary.


Makes about 2 cups.

This sauce tastes so good, almost like the real fettucine alfredo sauce! If you were blindfolded before tasting this, you would believe it was! 🧀
